Actually Bulls also have horns and I don't see any on that meaty steak
Some farmers have the horns removed so the bull will be safer to be around.  In the long shot of the Flame station you see a cow with horns.

LOT of new characters, easter eggs and questions revealed in this ep.  Loved the addition of a new faction to the island.  That'll keep it fresh!  If the ep was choppy, probably due to the fact that we had four individuals' flashbacks in the same ep.  Has there ever been more than one individual's flashback before?

Gave it a 9. Higher than last week's.

In my former life I was an Agricultural Sciences Teacher.  There are many breed of cattle that are polled (without horns).  Some of the most common are Angus, Limousin,Simmentals,Swedish Red Polled, etc.  So it is not unusual to see a polled bovine.  As a matter of fact many breeds have been crossbred for this particular genetic characteristis for ease of handling by ranchers or dairy men.   In additiona as SOL points out cattle can still be mechanically polled, however because of breeding polled cattle this is not as widely practices as it used to be.

Like it says, they depend more on the long hair for warmth, and less on subcantaneous fat, so they are leaner.  A noble creature! Obviously the higher order of cattle that this poor polled fella on the island is aspiring to become.
